I love this emulsion!
I love basil, and where I live, it is difficult to grow, and extremely expensive to buy fresh. This is SOOOO much better than dried basil! I love to use it in my tomato sauces, my potato soup--I use it all the time!

not at all water soluble
I wanted to use this for a hard seltzer. In the description it was suggested for beverages. When I added it there was green clumps floating around. I tried to stir them in and it continued to float to the top. Maybe it's good for cooking/baking but definitely not for beverages!
