What is the Difference between Frosting, Icing & Glaze?</h5
  • Frosting – thick, luscious spreadable covering for baked goods. Buttercream is a popular frosting type that develops a slight crust as it dries, making it perfect for use with edible decorations and piped details. Meringue frostings are soft, non-crusting, and have a beautiful silky finish that looks great alone or decorated with sprinkles and quins.
  • Icing – smooth, easy to work with icings, such as Royal Icing, are ideal for flooding and piping decorative details on cookies and cakes. Because it dries to a hard shell with a smooth finish, Royal Icing can also be used as a base finish for cakes. Like frosting, icing is easily flavored and colored.
  • Glaze or Glaze Icing – thin and easy to pour, glazes are ideal for drizzling as a finishing touch for cakes, breads, pastries, and other baked goods. While glazes will harden somewhat, they do not crust.
  • Ganache – a soft, smooth, creamy blend of chocolate and cream used for covering baked goods, as a filling, and in confectionery work.
