How to Make Gluten Free Pancakes, Waffles or Crepes
1 cup Pancake Mix
2 large eggs
cup water or milk substitute
Oil for frying
For Pancakes: Whisk together eggs and liquid of your choice. Add the pancake mix and stir until combined. Heat oil in pan until very hot. Spoon batter into pan and flip over when first side is cooked.
For waffles: Reduce liquid. Cook according to waffle iron directions
For crepes: increase liquid. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot. Crepes can be used like a burrito.
