OliveNation Dried Lupini Beansare extra large and hearty. They're off-white as dried beans and turn yellow once cooked. Important in Italian cuisine, brined Lupini Beans are often served as part of antipasti for festive occasions. In European countries like Portugal and Spain, the legume is served as a bar snack. You can enjoy them on their own or toss on a salad. Preparing Dried Lupini Beans can take several days, but their deliciousness is worth it, especially since they pack 13 grams of protein and 7 grams of fiber per serving. Our Dried Lupini Beans are non-GMO, kosher, and gluten-free.
Preparation:
Pick through Dried Lupini Beans and rinse well. Soak overnight in salted water. Rinse and place in a large pot and cover the beans with water. Boil for 3 minutes. Then reduce the heat and simmer until the skins are smooth, approximately 3 hours. If the beans taste bitter, you can soak in salted water until the desired taste is achieved. Be sure to change the water daily while soaking. Brining Lupini Beans is another traditional method of preparation.
Storage:
Store in a cool, dry place.

My new obsession
OK, I do have to admit, I was a little nervous buying these beans after seeing the previous review. BUT, I've been using other OliveNation products and never been disappointed before so I gave it a chance. I'm so happy I did! The beans are AMAZING! The rinsing process is painfully lengthy (took me over two weeks), but worth it in the end. I didn't have a problem with moldy beans, but I was storing them in the fridge the whole time during the rinsing process. I read that sometimes people store them on the counter, which might have caused the spoilage.

Moldy beans
I have been buying dried lupini beans for many years. This is my first and LAST time ordering from OliveNation. I think they have a storage problem. Sooooo many of the beans were moldy and had to be discarded. As I continue to rinse my lupini batch daily, I'm tossing out handfuls with every rinse. So disappointed. I have not had this problem with other companies that supply these beans.
