Ideal for high temperature baking, our nonfat milk powder blend for baking aids in browning and adds the richness of real dairy to baked goods or prepared mixes while reducing the total fat. Packaged in bulk for industrial and commercial food manufacturing applications, restaurant or bakery use, and emergency supply, this pantry staple will remain shelf stable for up to 12 months. Made from powdered nonfat dry milk and whey solids, this easy to use nonfat milk powder blend for baking has a fine texture that mixes easily with other dry baking ingredients, making it ideal for commercial prepared mixes. Because our Milk Powder High Heat is a blend of powdered NDM and whey solids, it is an economical alternative to our Nonfat Dry Milk High Heat, which is made using only nonfat dry milk. While these two products can be used for the same purposes, customers should note that this Milk Powder High Heat contains 20% protein content and 1.5% fat content, while Nonfat Dry Milk High Heat features a higher percentage of protein (34% protein and 1.5% fat).
For low temp bakery and dairy-based applications requiring high solubility, we recommend either our Milk Powder Low Heat (with whey solids) or our Nonfat Dry Milk Low Heat.
Please note that our high heat milk powder is intended to replace or enhance liquid milk in recipes and is not recommended for reconstitution as a table-ready beverage. For an easy-to-reconstitute milk replacer, we recommend using our Instant Powdered Nonfat Milk.
