Origins of Balsamic Vinegars
In the areas around the towns of Modena and Reggio-Emilia in Northern Italy true balsamic vinegars are prized by its residents. The peoples of these two regions have been producing authentic balsamic vinegars for over a thousand years. In fact when many residents of these areas go out to dinner they usually take a little silver flask with them containing true balsamic vinegar to be sprinkled on grilled meats or desserts such as gelato or fresh strawberries. It is necessary to experience the sublime richness of true aged balsamic vinegar in order to truly appreciate these culinary jewels. Authentic balsamic vinegar is long aged in wooden barrels without the addition of sugar, caramel or other vinegars. It is not mass produced and definitely not found on supermarket shelves.
