Description
Tamarind Powder by OliveNation is a sour spice that's commonly used in Asian cuisine, especially Indian dishes like lentils and curries. It adds a slightly sour taste to noodles, soups, sauces, marinades, and more. It enhances the other flavors in a dish, similar to lemon. Tamarind Powder also balances the flavors in fruity beverages and candy, creating a sweet sour taste. In Mexican cuisine, Tamarind is used to make aquas frescas, which are fruit drinks. Good aroma and flavor, but not right for my ice cream recipe
I used up the whole 4 ounces to get a strong enough flavor, which is OK, but the texture of my ice cream turned out grainy.

tamarind powder
I was expecting the pulp of the tamarind only but apparently the seed and the pod were powdered. This may be the reason for a slight scent on the beberage which is not present on the pulp ever. The flavour is fine, though there is a thick sediment on the drink. I would suggest to the vendor to disclose that the whole fruit has been powdered, and whether the fruit is organic or not. After some research on the tamarind fruit, I couldn't find if the seeds and shell have any health properties, the pulp does. For flavor, I'd like to add that even the leaves of the plant are acidic, however we do not consume that part, nor the seeds (which do not add to the flavor) and the shell only when is still green has some acidic flavor but not when is dry and brown. In other words, the powder contains the seeds and shell of the fruit which do not add to the flavor, they add to the weight only and also make the beberage heavy in sediment with a slight odor that may not be accepted by some.

Excellent Product
As a person who grew up eating fresh tamarind right from the trees in the front yard of our house, I can say that this product is excellent. I use it to add a punch of acid in an Asian fusion rub that I sell. It gave me the perfect balance that I was looking for.
