    Valrhona Manjari 64% Dark Bittersweet Chocolate Feve (wafers/) , Valrhona Grand Cru Manjari is an extraordinary bittersweet couverture chocolate made from a blend of the best Trinitarios cocoa beans from Madagascar. With a 64% cocoa content (with 35% Sugar and 40.5% cocoa butter), Valrhona's Manjari is perfect for the bittersweet chocolate needs for home pastry chefs and professionals alike - it is the perfect compromise between the ultra dark bittersweet chocolate couvertures with 70% cocoa content and the often too sweet dark chocolate couvertures with less than 60% cocoa content.

    Storage and Shelf Life:

    Chocolate must be kept in a cool (preferably below 65 F) and dry environment. When kept in proper storage chocolate can be in good condition for a year or two or even longer. Chocolate is susceptible to picking up "off notes" from strongly flavored products such as caraway, onion, garlic, etc., and should be stored separately. Occasionally there may be light-colored streaks or film on the surface of the chocolate. This occurs naturally and is a characteristic of chocolate. It will disappear when the chocolate is re-melted.

      Perfect for Choc Chip Cookies

      I normally use 70% guanaja from Valrhona but I had to make trays choc chip cookies for my son's birthday and bought Manjari instead to suit our party budget. It worked out perfectly, not to sweet for both kids and adults. Highly recommend!
