These dried wood ear mushrooms, sometimes called jelly ears, are a nutritious ingredient with many health benefits. Picked whole and then dehydrated, this versatile fungus is high in Vitamin D, protein, potassium, and iron, but also low in calories, sodium, and fat. These whole dried shredded wood ear mushrooms are frequently used as an economical substitution for Cloud Ears (Black Fungus), which are from a related family and offer similar taste and texture. Commonly used in stir fry recipes, soups, savory pasta dishes, and even salads, these fungi are easy to use and offer superior shelf life when stores. Dried wood ear adds a mild, earthy taste and unique chewy texture that also adds crunch. These mushrooms can be stored either frozen or unfrozen. They will keep in the freezer for up to 3 years or can be stored in a cool, dry place for up to 12 months.

Directions for use: To rehydrate, soak in warm (not boiling) water for 20 to 30 minutes, then rinse. Repeat as needed until mushrooms are fully clean, then drain and use as desired.

These wood ear mushrooms are of pretty good quality. I reconstitute them, cut them up, and add them to stir-fries. I'm happy with their size and quality. They are also pretty clean and taste clean, too.
