Why are some extracts clear?

A fruit is composed of a lot of different parts: water, citric acid, fiber, pectic, pigment, etc. Flavor chemicals are the part of the fruit that create the particular flavor. Sometimes natural flavor chemicals cannot be separated from the botanical but many times they can be and are colorless. Synthetic flavor chemicals (man made to duplicate natural flavor chemicals) are typically clear. The most obvious example is peppermint. When you buy mint chocolate chip ice cream, the green color is added color. Actual peppermint flavor is clear. The only coloring we use in any of the flavor extracts is natural caramel color.
